Pumpkin Pie Recipe

Here's a delicious, well-tested and flexible recipe for any winter squash from our squash expert, Lucca McCaleb

CRUST: 1 Cup flour  (wheat, rice, I like corn)
          1/2 tsp sweetener (sugar, agave, honey, coconut sugar...)
          1/2 tsp baking powder
          3 Tbs oil (preferably hard oil coconut, cocoa, palm, butter)
          3 Tbs milk (coconut, rice, soy...)
          1/2 tsp lemon juice mixed in 3 Tbs. water
    Mix and knead with hands until doughy. Press into lightly oiled pie pan. You can add more flour or milk to adjust crust moistness
 
 
FILL: Blend together -
       2 cups cooked squash (cut in half, oil on top, water in bottom of the pan. Cook for 1 hour @ 400 F
       1 cup milk (coconut, rice, soy...) 
       3/4 cup sweetener (sugar, agave, honey, coconut sugar, maple syrup..)
       1/4 cup corn starch as a thickener 
       1 tsp vanilla 
       1/2 tsp salt 
       1 tsp cinnamon 
       1/2 tsp ginger 
       1/4 tsp nutmeg 
       1/4 tsp allspice 
       1/2 tsp molasses 
 
 
COOK at 350 for 50 minutes
